Lamb Meatball Sliders / Locanda Verde / Tribeca

Wow! These little lamb sliders pack a lot of lamby punch. The meat is explosively flavorful, striking a careful balance with a tangy tomato sauce on a bed of creamy, Italian goat cheese. The bun is nice and neutral and sturdy, and holds its own against a juicy, saucy slider that might slop up lesser bread. The choice of Italian caprino is spot on, too. Lamb sliders so often come with a huge chunk of feta — good, but overpowering — or something like provolone that cools into a nasty little cheese-shell. A creamy goat cheese provides a perfect, cheesy bed for the lamb, and combines with the tomato sauce to create a nice, soft texture.

Laaaaamby, lamb lamby...LAMB!

Laaaaamby, lamb lamby...LAMB!

Oh, hang on! I completely forgot about the cucumber! You see that little ring sitting on top of each meatball? That’s a crunchy ring of cucumber that provides a refreshing balance to the rich lamb. The taste of the cucumber also helps tie the caprino (which I think had some dill in it) to the lamb. There’s a sort of Greekness to the slider, but I think this approach works better than simply slapping tzatziki on a lamb meatball. I mean, don’t get me wrong — that would be good. This is just better.

Basically, what I’m saying is: these sliders are really good, and definitely deserve a spot on the 101 Best. Under normal circumstances, a simple slider like this would have a tough time being interesting enough to garner that level of praise, but I really like the way these little burgers come together with their lamby, goat cheesy, meaty goodness.
